DAY # 15 Cinnamon Sugar Pecans

Growing up in central Texas, you learn to truly appreciate the pecan trees.  They are BIG and they are beautiful and every year they litter your lawn with hundreds of pecans.  I remember people knocking on our door and asking if they could pick the pecans up out of our yard.  I also remember sitting in the swing on our front porch and watching my dad and sister crack them open and eat them.  I, however, hated them!  LOL, you would NEVER catch me eating a raw pecan because they tasted like dirt.  I do like pecans that are cooked into desserts though, cookies, pies, cupcakes, frosting...

When i happened upon a pin for Cinnamon Sugar Pecans, i was very excited.  Every time we walk through the mall, they have a little stand that sells them and they smell AMAZING, so off i went to the store to pick up the ingredients.  What i wasn't quite prepared for was the price for a bag of halved pecans (especially when we used to get them for free lol).  I paid $6 per bag!

Here's the recipe after i altered it just a bit.  I also wanted a lot of pecans so i did this 3 times with 3 bags of pecans...

Ingredients:
1 lrg. egg white (per lrg bag of pecans)
1 lrg bag halved pecans (my lrg bag came out to about 2 1/2 cups)
1/4 cup sugar
1 tbs cinnamon
1/4 tsp salt
1 tsp vanilla

Directions:
Preheat oven to 300 degrees.  Place 1 bag of pecans in large mixing bowl.  In small mixing bowl, whisk egg white and vanilla together.  Poor over pecans and mix well with wooden spoon.  In separate small bowl, mix cinnamon, sugar, and salt.  Poor small amounts over pecans and mix well, repeat until all of cinnamon mixture has been used. 



Place on ungreased cookie sheet and bake for 15 minutes.  Let cool completely before scraping off of pan with a spatula. 



Place in a zip lock bag or in a jar with a lid and store in a cool place.  These make the best snack, especially with a cup of coffee  :)



Don't freak out when you see the mess that is baked onto your pan.  I was afraid that i would be scrubbing for hours, however, with a little hot water, the sugar dissolved away and it actually took very little scrubbing.
